Preparation
  1. Preheat your oven to 350°F (175°C) to ensure an even bake.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cardamom.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, then add the orange juice and zest and mix until fully incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  6. Line a muffin tin with paper liners or grease it well, then pour the batter into the cups, filling each about two-thirds full.
Baking
  1. Place the muffins in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.

Notes

For lighter muffins, you can substitute half of the all-purpose flour with whole wheat flour. For a vegan version, use flax eggs and dairy-free butter. Store in an airtight container for up to three days or freeze for up to three months.
