  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cardamom
Wet Ingredients
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup orange juice
  • 1 zest zest of 1 orange

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a muffin tin with muffin liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cardamom until well combined.
  3. In another bowl, mix together the melted butter, eggs, orange juice, and orange zest. Stir until fully incorporated.
Mixing the Batter
  1. Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  2. Spoon the batter evenly into the prepared muffin tins, filling each about 2/3 full.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
