Ingredients
  

For the Jelly
  • 1 cup orange juice Freshly squeezed for best flavor.
  • 1 cup pomegranate juice Use 100% juice for optimal results.
  • 2 cups granulated sugar Standard white sugar.
  • 1 cup fruit pectin For setting the jellies.
  • 1/4 cup lemon juice Fresh lemon juice.
  • 1 teaspoon citric acid To enhance flavor and acidity.
  • to taste Powdered sugar For dusting before serving.

Method
 

Preparation
  1. Combine the orange juice, pomegranate juice, and lemon juice in a large saucepan over medium heat. Stir until well mixed.
  2. Slowly add the granulated sugar while stirring constantly until the sugar is completely dissolved, which usually takes about 5 minutes.
  3. Gradually mix in the fruit pectin, stirring until everything is combined thoroughly. Watch for bubbles forming as the mixture heats.
  4. Increase the heat and bring the mixture to a full rolling boil. Boil for about 3 minutes while stirring constantly.
  5. Once boiling, add the citric acid and stir well, continuing to boil for an additional minute before removing from heat.
  6. Immediately pour the mixture into jelly molds or a prepared dish. Allow it to cool at room temperature for about an hour before transferring to the refrigerator.
  7. Refrigerate for at least 3 hours or until set completely.
  8. Once set, gently remove the jellies from the molds and dust them lightly with powdered sugar before serving.

Notes

If desired, substitute other fruit juices like grape or apple. Store jellies in an airtight container in the refrigerator for 1–2 weeks or freeze for up to 3 months. Allow to sit at room temperature to soften before serving.
