  • 2 cups orange juice freshly squeezed if possible
  • 2 cups pomegranate juice ensure it's pure and not from concentrate

  • 4 cups granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup fruit pectin
  • 1/4 teaspoon citric acid

Method
 

Preparation
  1. Measure out 2 cups of both orange juice and pomegranate juice, freshly squeeze the oranges for maximum flavor if possible.
  2. In a large saucepan, combine fruit juices, granulated sugar, and corn syrup. Stir over medium heat until everything is dissolved completely.
  3. Once the mixture is hot but not boiling, gradually whisk in the fruit pectin and citric acid, stirring for about 3-5 minutes until well combined and slightly thickened.
  4. Turn the heat up and bring the mixture to a full rolling boil. Boil for exactly 1 minute while stirring continuously.
Pour and Chill
  1. Carefully pour the jelly mixture into sterilized jars or containers, and sprinkle pomegranate seeds on top if desired. Allow to cool at room temperature before transferring to the refrigerator.
  2. Let the jellies chill in the refrigerator for at least 4 hours or overnight until fully set.
Serving
  1. Once set, serve the jellies cold and enjoy as a vibrant centerpiece on your dessert table.
