  • 1 cup orzo pasta

  • 1 medium onion chopped

  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning

Cooking Instructions
  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the bite-sized chicken pieces to the pot. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  3. Once the chicken is done, add the chopped onion and garlic. Stir and sauté for about 2-3 minutes until fragrant.
  4. Mix in the diced red bell pepper and cook for an additional 2 minutes.
  5. Add the orzo pasta and chicken broth to the pot. Increase the heat to bring the mixture to a boil.
  6. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 10-12 minutes or until the orzo is tender and has absorbed most of the liquid.
  7. Remove from heat, stir in the Parmesan cheese (if using), and garnish with fresh parsley.
  8. Serve hot and enjoy your flavorful dish with family and friends!
