Preparation
- Gather all your ingredients. Chop the onion and spinach if you're using it.
- In a large, deep skillet or pot, heat a bit of butter or oil over medium heat. Add the chopped onions and sauté until they become translucent and fragrant, about 5-7 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the frozen perogies to the pot, stirring gently to combine them with the broth and onions. Ensure they are mostly submerged.
- After about 10 minutes of simmering, add the sour cream and mix until everything is combined.
- If using, toss in spinach and let it wilt for another 2-3 minutes.
- Sprinkle the shredded cheddar cheese over the top, cover the pot, and allow the cheese to melt for about 5 minutes.
- Season with salt and pepper as needed. Serve hot and enjoy!
Notes
You can substitute cheddar with mozzarella or a blend of cheeses. Make sure not to overcrowd the pot with perogies.
