  • 1 package frozen perogies
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 cup spinach (optional) Can be omitted
  • Salt and pepper to taste For seasoning
  • Butter or oil for cooking

Method
 

Preparation
  1. Gather all your ingredients. Chop the onion and spinach if you're using it.
  2. In a large, deep skillet or pot, heat a bit of butter or oil over medium heat. Add the chopped onions and sauté until they become translucent and fragrant, about 5-7 minutes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the frozen perogies to the pot, stirring gently to combine them with the broth and onions. Ensure they are mostly submerged.
  5. After about 10 minutes of simmering, add the sour cream and mix until everything is combined.
  6. If using, toss in spinach and let it wilt for another 2-3 minutes.
  7. Sprinkle the shredded cheddar cheese over the top, cover the pot, and allow the cheese to melt for about 5 minutes.
  8. Season with salt and pepper as needed. Serve hot and enjoy!

Notes

You can substitute cheddar with mozzarella or a blend of cheeses. Make sure not to overcrowd the pot with perogies.
