  • 1 teaspoon Italian seasoning

  1. Begin by cutting your chicken breast into bite-sized pieces. Mince the garlic and set aside.
Cooking
  1. Heat a large pot over medium-high heat and add the olive oil. Once hot, add the chicken pieces. Season with salt, pepper, and Italian seasoning. Sear the chicken until golden brown, roughly 5-7 minutes. Remove and set aside.
  2. In the same pot, add the minced garlic and sauté for about 1 minute, ensuring not to burn it.
  3. Stir in the rice, allowing it to absorb the flavors of the garlic for about 2 minutes.
  4. Return the chicken to the pot and pour in the chicken broth. Stir everything together, bringing it to a boil.
  5. Once boiling, reduce the heat to low and cover. Let it simmer for 20 minutes until the rice is tender and the liquid is absorbed.
  6. Sprinkle the grated Parmesan cheese over the top, cover again, and let it melt for a few minutes.
  7. Finally, fluff the rice with a fork, garnish with fresh parsley, and enjoy your warm, aromatic meal!

Notes

If you want to make it even heartier, feel free to add veggies like peas or spinach. Ensure all the broth is absorbed before serving to keep the texture spot on! Store in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months.
