- Heat the olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and minced garlic and cook until fragrant and the onion is translucent, about 3–4 minutes.
- Add the diced chicken breasts, seasoning with salt and pepper. Cook for about 5-7 minutes, stirring often, until the chicken is browned and cooked through.
- Pour in the rice and chicken broth, stirring well. Bring the mixture to a boil, then reduce to a simmer.
- Incorporate the mixed vegetables, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is fluffy and has absorbed the broth.
- Stir in fresh herbs just before serving for extra flavor and freshness.
- Ladle the One-Pot Chicken and Rice into bowls and enjoy.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat on the stove, adding a splash of water or chicken broth to restore moisture.
