  • 1 cup rice (preferably long-grain)
  • 2 cups chicken broth
  • 2 pieces chicken breasts, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn, etc.)
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • optional herbs (thyme, parsley) for added flavor

Method
 

Preparation
  1. Heat the olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and minced garlic and cook until fragrant and the onion is translucent, about 3–4 minutes.
  2. Add the diced chicken breasts, seasoning with salt and pepper. Cook for about 5-7 minutes, stirring often, until the chicken is browned and cooked through.
  3. Pour in the rice and chicken broth, stirring well. Bring the mixture to a boil, then reduce to a simmer.
  4. Incorporate the mixed vegetables, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is fluffy and has absorbed the broth.
  5. Stir in fresh herbs just before serving for extra flavor and freshness.
  6. Ladle the One-Pot Chicken and Rice into bowls and enjoy.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat on the stove, adding a splash of water or chicken broth to restore moisture.
