  • 8 ounces pasta (such as penne or rotini)
  • 1 pound ground beef or turkey Ground turkey can be used as a leaner alternative.
  • 1 packet taco seasoning
  • 14.5 ounces can diced tomatoes
  • 15 ounces can black beans, drained and rinsed
  • 2 cups beef broth or water
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped parsley or cilantro for garnish

Cooking Steps
  1. In a large pot or skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat if necessary.
  2. Stir in the taco seasoning, cooked meat, and mix to ensure the meat is well coated.
  3. Add the pasta, diced tomatoes, black beans, and beef broth to the pot. Stir well to combine all the ingredients.
  4. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat and cover. Let it simmer for about 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally.
  5. Remove the pot from heat and stir in the shredded cheese until melted. Season with salt and pepper to taste.
  6. Garnish with chopped parsley or cilantro before serving, and enjoy!

Notes

Store in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months. When reheating, add a splash of broth or water to restore creaminess.
