- Begin by gathering all your ingredients. Rinse and chop the broccoli into small florets, and mince the garlic.
Cooking
- In a large pot or skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes until fragrant, but be careful not to let it burn!
- Stir in the orzo and toast it for a couple of minutes in the garlic oil.
- Slowly add the vegetable broth, and bring it to a gentle boil. Stir occasionally to prevent sticking.
- Once boiling, add the broccoli florets. Reduce the heat to low, cover, and let it simmer for about 10-12 minutes or until the orzo is cooked al dente and the liquid is absorbed.
- Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

Notes
You can add cooked chicken or chickpeas for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for about 2 months. Reheat on the stovetop with a little extra broth.
