Equipment

  • - Large pot or Dutch oven
  • Measuring cups and spoons
  • - Wooden spoon
  • Knife and cutting board

Ingredients

  • For the Pasta
  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or homemade blend
  • 1 can 14.5 oz diced tomatoes (undrained)
  • 1 can 8 oz tomato sauce
  • 2 cups chicken or beef broth
  • 12 oz penne or rotini pasta
  • 1 cup shredded cheddar cheese
  • For Garnish
  • Fresh cilantro chopped
  • Sour cream
  • Diced avocado

Instructions

  • Step 1: Cook the Beef
  • In a large pot or Dutch oven, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
  • Step 2: Add the Seasonings and Liquids
  • Stir in the taco seasoning, diced tomatoes, tomato sauce, and broth. Bring to a boil.
  • Step 3: Cook the Pasta
  • Add the pasta and reduce the heat to medium-low. Simmer for 10-12 minutes, or until the pasta is tender and the sauce has thickened.
  • Step 4: Add the Cheese
  • Stir in the shredded cheddar cheese until melted and combined.
  • Step 5: Garnish & Serve
  • Garnish with fresh cilantro and serve hot with sour cream and diced avocado on the side.
