Preparation
  1. Start by washing and halving your baby potatoes. Slice the smoked sausage and chop your bell pepper and onion.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Once warmed, add the sliced sausage and cook until browned, about 3-5 minutes.
  2. Toss in the halved baby potatoes. Stir well and let them cook for about 10 minutes, stirring occasionally until they start to soften.
  3. Add the chopped bell pepper and onion to the pan. Season everything with garlic powder, paprika, salt, and pepper. Mix well.
  4. Continue cooking for an additional 10-12 minutes, stirring occasionally, until the potatoes are fork-tender and the vegetables are nicely sautéed.
