Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the sausage into bite-sized pieces.
  3. In a large mixing bowl, combine the sausage slices, halved baby potatoes, and trimmed green beans.
  4. Drizzle the olive oil over the sausage and vegetables. Add minced garlic, Italian seasoning, salt, and pepper. Toss everything together until well-coated.
  5. Transfer the mixture to a large baking sheet, spreading it into a single layer for even cooking.
Cooking
  1. Place the baking sheet in the preheated oven.
  2. Roast for 25-30 minutes or until the potatoes are tender and the sausage is browned, stirring halfway through.
