Ingredients
  

  • 8 oz pasta spaghetti or penne
  • 1 tablespoon olive oil
  • 2 cups chicken or vegetable broth
  • 1 cup cherry tomatoes halved
  • 1/2 onion diced
  • 2 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese optional

Instructions
 

  • Heat the Olive Oil: In a large skillet, warm the olive oil over medium heat.
  • Sauté Onions: Add the diced onion and sauté for 2-3 minutes until it becomes translucent.
  • Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  • Combine Ingredients: Pour in the chicken or vegetable broth, then add the pasta, halved cherry tomatoes, Italian seasoning, salt, and pepper.
  • Bring to a Boil: Increase the heat to bring the mixture to a boil, then reduce it to low and cover the skillet.
  • Simmer: Allow everything to cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed.
  • Final Touches: Remove the skillet from the heat, let it sit for a few minutes, and then garnish with fresh basil and optional grated Parmesan cheese before serving!
