Preparation
- Preheat your oven to 400°F (200°C) to ensure it's ready for roasting.
- Pat the chicken thighs dry with paper towels. Season generously with salt, pepper, and dried thyme.
Searing
- In a large oven-safe pan, heat the olive oil over medium heat. Once hot, add the chicken thighs skin-side down and sear for about 4-5 minutes until golden brown.
- Turn the chicken over and cook for another 2-3 minutes.
Adding Flavors
- Reduce the heat to low and sprinkle the minced garlic around the chicken in the pan. Pour the lemon juice over the chicken and allow it to sauté for about 1 minute until fragrant.
- Carefully pour the chicken broth into the pan, ensuring it surrounds the chicken.
Roasting
- Transfer the pan to the preheated oven and roast for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
- Remove the pan from the oven and garnish with fresh parsley before serving.
Notes
For substitutions, consider using bone-in chicken legs instead of thighs. Ensure even sized chicken pieces for uniform cooking. Don't skip the searing step for flavor and texture.
