  • 1 pound Italian sausage (casing removed)
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell pepper, chopped (any color)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 cups chicken or vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

  • Fresh parsley, for garnish (optional)
  • Grated Parmesan cheese, for serving (optional)

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, breaking it apart as it cooks, for about 5-7 minutes.
  2. Add the diced onion and chopped bell pepper to the pan. Sauté for about 2-3 minutes until the vegetables are tender. Stir in the minced garlic and sauté for another minute.
  3. Pour in the orzo, diced tomatoes, chicken or vegetable broth, and Italian seasoning. Season with salt and pepper to taste.
  4. Increase the heat to medium-high and bring the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally until the orzo is tender and has absorbed most of the liquid.
  6. Taste and adjust the seasoning if needed. Serve hot, garnished with fresh parsley and grated Parmesan cheese, if desired.

Notes

For added flavor, feel free to incorporate your favorite vegetables like zucchini or spinach. Consider well-seasoned Italian sausage for the best taste.
