  • 1 pound ground beef (or turkey) You can use ground turkey or chicken for a lighter option.
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 cup cheddar cheese, shredded Reserve half a cup for topping.
  • 1 can cream of mushroom soup Cream of chicken can be used as an alternative.
  • 1 cup beef broth
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 3 cups frozen tater tots

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large oven-safe skillet, cook the ground beef and diced onion over medium heat until the meat is browned and the onions are translucent. Drain any excess fat.
  3. Stir in the frozen mixed vegetables, cream of mushroom soup, beef broth, garlic powder, onion powder, salt, and pepper. Mix everything well.
  4. Sprinkle 1/2 cup of shredded cheddar cheese on top of the mixture, stirring gently to incorporate.
  5. Evenly distribute the frozen tater tots on top of the casserole mixture.
  6. Bake in the preheated oven for 20-25 minutes, until the tater tots are golden and crispy.
  7. Remove from the oven, sprinkle the remaining cheddar cheese on top, and return to the oven for an additional 5 minutes to melt the cheese.
  8. Let the casserole cool for a few minutes before serving.

Notes

For added flavor, consider topping with hot sauce or diced jalapeños. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 2 months.
