Preparation
- Preheat the oven to 425°F (220°C).
- In a large oven-safe skillet, cook the ground beef and diced onion over medium heat until the meat is browned and the onions are translucent. Drain any excess fat.
- Stir in the frozen mixed vegetables, cream of mushroom soup, beef broth, garlic powder, onion powder, salt, and pepper. Mix everything well.
- Sprinkle 1/2 cup of shredded cheddar cheese on top of the mixture, stirring gently to incorporate.
- Evenly distribute the frozen tater tots on top of the casserole mixture.
- Bake in the preheated oven for 20-25 minutes, until the tater tots are golden and crispy.
- Remove from the oven, sprinkle the remaining cheddar cheese on top, and return to the oven for an additional 5 minutes to melt the cheese.
- Let the casserole cool for a few minutes before serving.
Notes
For added flavor, consider topping with hot sauce or diced jalapeños. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 2 months.
