Preparation
- Start by slicing your Halal sausage and dicing the onion and bell pepper. Mince the garlic and have all your ingredients ready to go.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Stir occasionally to ensure even cooking.
- Toss in the diced onion, bell pepper, and garlic. Sauté for another 3-4 minutes, until the vegetables have softened.
- Add the uncooked rice to the skillet, and stir to coat it with the sausage and veggies.
- Pour in the diced tomatoes and broth, followed by the Cajun seasoning and paprika. Stir until everything is well combined.
- Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid. Check occasionally to avoid burning.
- Once cooked, fluff the rice with a fork, adjust the seasoning with salt and pepper, and garnish with fresh parsley or green onions.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 3 months and reheat in the microwave or skillet with a splash of broth.
