Preparation
  1. Gather all your ingredients, chop the green olives, and mince the garlic.
  2. In a food processor, combine crumbled feta cheese, chopped green olives, Greek yogurt, minced garlic, and lemon juice. Pulse until creamy.
  3. While blending, gradually pour in the extra virgin olive oil until fully mixed and creamy.
  4. Taste the dip and season with salt and pepper, adjusting to your preference.
  5. Transfer to a serving dish and garnish with fresh parsley if desired. Chill in the fridge for at least 30 minutes before serving.

Notes

This dip can be stored in an airtight container in the refrigerator for up to 4 days. It tastes better after a day as the flavors meld. Optional substitutions include sour cream for Greek yogurt and low-fat versions of ingredients to reduce calories.
