  • 3 overripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the overripe bananas with a fork until smooth. Stir in the melted butter until well-combined.
  3. Add the baking soda and salt to the banana mixture. Mix in the sugar, beaten egg, and vanilla extract, stirring well.
  4. Gradually add the flour, stirring just until combined. Be careful not to overmix!
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack. Slice and serve once it has cooled!

Notes

To store your leftover banana bread, wrap it tightly in plastic wrap or aluminum foil and keep it at room temperature for up to 4 days. For longer storage, freeze individual slices.
