Ingredients
  

For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
For the Gelatin Layer
  • 1/2 cup blue gelatin or blue Jell-O Ensure Halal-certified gelatin if needed.
  • 1 cup water (for gelatin) Use boiling water to dissolve the gelatin.
For the Base
  • 1/2 cup crushed graham crackers Can substitute with gluten-free cookies.
For Decoration
  • gummy fish or other ocean-themed candies Optional for decoration.

Method
 

Prepare the Blue Gelatin
  1. In a mixing bowl, combine the blue gelatin powder with 1 cup of boiling water and stir until fully dissolved. Pour it into clear dessert cups and let it set in the refrigerator for about 30 minutes.
Make the Cheesecake Filling
  1. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped cream gently to maintain the light and fluffy texture.
Layer the Dessert
  1. Once the gelatin has set, add a layer of crushed graham crackers on top of the gelatin, followed by a generous layer of the cream cheese mixture.
Chill and Serve
  1. Place the cups back into the fridge for at least 30 minutes to set. Once ready, you can top them with gummy fish or other ocean-themed candies for a fun, decorative touch.

Notes

These cups can be stored in the refrigerator for up to 2-3 days or frozen for up to one month. Cover with plastic wrap to keep fresh.
