Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the oats, almond flour, protein powder, baking soda, and salt.
- In a separate bowl, mix the honey or maple syrup with the peanut or almond butter until smooth.
- Pour the wet mixture into the dry mixture and stir until fully combined. Fold in chocolate chips and nuts or dried fruits if desired.
- Using a tablespoon, scoop out the cookie dough and place it onto a lined baking sheet.
Baking
- Bake for 10-12 minutes until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

- Enjoy warm or store them in an airtight container.

Store cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months. Thaw at room temperature before enjoying.
