Ingredients
  

Dry Ingredients
  • 1 cup oats Use rolled or quick oats.
  • 1/2 cup almond flour Can substitute with oat flour or whole wheat flour.
  • 1/2 cup protein powder Flavor of your choice.
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/4 cup peanut butter or almond butter
Optional Add-ins
  • 1/2 cup chocolate chips Optional.
  • 1/2 cup chopped nuts or dried fruit Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the oats, almond flour, protein powder, baking soda, and salt.
  3. In a separate bowl, mix the honey or maple syrup with the peanut or almond butter until smooth.
  4. Pour the wet mixture into the dry mixture and stir until fully combined. Fold in chocolate chips and nuts or dried fruits if desired.
  5. Using a tablespoon, scoop out the cookie dough and place it onto a lined baking sheet.
Baking
  1. Bake for 10-12 minutes until the edges are lightly golden.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Serving
  1. Enjoy warm or store them in an airtight container.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months. Thaw at room temperature before enjoying.
