Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, pour the rolled oats and cover them with 1 cup of boiling water. Allow to sit for about 15 minutes.
- Once the oats have softened, add in the molasses, honey, and vegetable oil. Stir well.
- In another bowl, whisk together the salt, baking powder, baking soda, and flour until evenly blended.
- Gradually mix the dry ingredients into the wet mixture, stirring just until combined.
- Grease a loaf pan or line with parchment paper, then pour the batter into the pan.
Baking
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For storage, wrap cooled bread tightly in plastic wrap or aluminum foil. It lasts up to 1 week at room temperature or can be frozen for 3 months. Reheat slices in a toaster or oven.
