Ingredients
  

Dry Ingredients
  • 1 cup oat flour You can make your own by blending rolled oats
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar Or sweetener of your choice
Wet Ingredients
  • 1 cup milk Dairy or non-dairy
  • 1 large egg
  • 1 tablespoon melted coconut oil Or butter

Preparation
  1. In a large mixing bowl, combine the oat flour, baking powder, salt, and sugar. Stir until well mixed.
  2. In a separate bowl, whisk together the milk, egg, and melted coconut oil until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently to combine—don’t overmix! A few lumps are perfectly fine.
  4. Preheat a non-stick skillet or griddle over medium heat. You can test if it’s hot enough by splashing a few drops of water on the surface—if they sizzle, it’s ready to go!
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface. Flip and cook for an additional 1-2 minutes until golden brown.
  6. Serve warm with your favorite toppings and enjoy!

Notes

Tips: Don't overmix the batter, adjust for thickness with milk, add-ins like blueberries or chocolate chips are great, and leftovers can be stored in the fridge or frozen for later.
