Ingredients
  

For the crust
  • 1 cup crushed graham crackers
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries Carefully fold to maintain their shape.
  • 1/2 cup whipped cream

Method
 

Preparation
  1. In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until thoroughly combined and the mixture resembles wet sand.
  2. Using your fingers or the bottom of a glass, press the mixture firmly into the bottom of a greased mini muffin tin. Make sure to create an even layer and compact it well. Place in the refrigerator to set while you prepare the cheesecake filling.
  3. In a separate mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Gently fold in the whipped cream until fully incorporated.
  5. Carefully fold in the fresh raspberries.
  6. Remove the crusts from the refrigerator and spoon the cheesecake filling on top of each crust, smoothing the tops with a spatula.
  7. Return the muffin tin to the refrigerator for at least 2-3 hours, or until the bites are firm and set.
  8. Once set, carefully remove each bite from the muffin tin. Garnish with extra raspberries and whipped cream if desired.

Notes

These bites can be prepared a day in advance for better flavor. Store in an airtight container in the fridge for up to 5 days or freeze with parchment between layers.
