Preparation
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- Stir in the undrained crushed pineapple into the cream cheese mixture until well combined.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the pineapple mixture.
Layering
- In a greased 9x9-inch dish, layer half of the graham crackers at the bottom.
- Spread half of the pineapple cream mixture over the graham crackers, then repeat the layering process.
Chilling
- Cover the dish with plastic wrap and let it chill in the refrigerator for at least 4 hours, or overnight if possible.
Serving
- Once chilled, serve slices topped with extra whipped topping or a sprinkle of crushed nuts.
Notes
Keep in the refrigerator covered tightly and consume within 3 days. Freezing is not recommended due to the texture of the whipped cream.
