For the Cream Layer
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 package (8 ounces) cream cheese, softened at room temperature for easier mixing
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream whipped to stiff peaks
  • 1 teaspoon vanilla extract
  • 1 can (8 ounces) whipped topping (like Cool Whip)
For the Base Layer
  • 1 package (9 ounces) graham crackers feel free to toast briefly to avoid soggy layers

Method
 

Preparation
  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  2. Stir in the undrained crushed pineapple into the cream cheese mixture until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the pineapple mixture.
Layering
  1. In a greased 9x9-inch dish, layer half of the graham crackers at the bottom.
  2. Spread half of the pineapple cream mixture over the graham crackers, then repeat the layering process.
Chilling
  1. Cover the dish with plastic wrap and let it chill in the refrigerator for at least 4 hours, or overnight if possible.
Serving
  1. Once chilled, serve slices topped with extra whipped topping or a sprinkle of crushed nuts.

Notes

Keep in the refrigerator covered tightly and consume within 3 days. Freezing is not recommended due to the texture of the whipped cream.
