Ingredients
  

Main Ingredients
  • 1 cup pecans (finely chopped)
  • 1 cup dates (pitted and chopped) Should be soft; soak in warm water if hard.
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • a pinch salt
Optional Toppings
  • melted dark chocolate For dipping or drizzling.
  • shredded coconut For rolling or topping.
  • finely chopped nuts For rolling or topping.

Method
 

Preparation
  1. Chop the pecans and dates. If the dates are hard, soak them in warm water for a few minutes before chopping.
Combining Ingredients
  1. In a large bowl, mix together the chopped pecans, dates, almond flour, maple syrup, vanilla extract, cinnamon, and salt until well combined.
Forming the Balls
  1. Take about a tablespoon of the mixture and roll it between your palms to form balls, approximately 1 inch in diameter.
Adding Toppings
  1. If desired, dip or roll the balls in melted dark chocolate, shredded coconut, or finely chopped nuts.
Chilling
  1. Place the pecan pie balls on a parchment-lined tray and refrigerate for about 30 minutes to firm up.
