Ingredients
  

For the base
  • 1 cup rolled oats
  • ½ cup creamy peanut butter Can substitute with crunchy peanut butter or almond butter.
  • ¼ cup honey Can use maple syrup for a vegan option.
  • ½ teaspoon vanilla extract
  • a pinch of salt
Optional mix-ins
  • cup mini chocolate chips Can substitute with your favorite mix-ins.

Preparation
  1. In a medium mixing bowl, combine rolled oats, creamy peanut butter, honey, vanilla extract, and salt. Stir until all ingredients are thoroughly combined.
  2. Gently fold in the mini chocolate chips or any mix-ins of your choice, ensuring an even distribution throughout the mixture.
  3. Line a muffin tin with paper liners or grease it lightly. Using a spoon, scoop out the mixture and pack it into each cup, flattening the top slightly.
  4. Place the tin in the fridge for at least 30 minutes, allowing them to firm up.
  5. Once chilled, remove the cups from the muffin tin and enjoy! Store any leftovers in an airtight container.

Notes

These cups can be stored in an airtight container in the refrigerator for up to a week or frozen for up to three months. No need for reheating; they’re delicious straight from the fridge or at room temperature.
