- In a large bowl, mix together the rolled oats, pumpkin puree, almond butter, honey, vanilla extract, pumpkin pie spice, and a pinch of salt.
- Stir until all ingredients are well combined, and the mixture is sticky but holds together. If it feels dry, add a bit more almond butter or a splash of water.
- Place the mixture in the refrigerator for about 10-15 minutes to help it firm up.
- Once chilled, use your hands to roll the mixture into bite-sized balls, aiming for about 1 inch in diameter.
- Place the energy balls in an airtight container in the refrigerator for up to one week or freeze for longer storage.

These energy balls store beautifully and can be frozen for longer use. Pair them with sliced apples or a light yogurt dip for a refreshing snack.
