  • 1 cup cashew butter
  • 1/2 cup maple syrup (or honey) For a non-vegan option
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 cup cocoa powder
  • a pinch salt

Method
 

Preparation
  1. Line an 8x8-inch square pan with parchment paper for easy removal.
  2. In a large bowl, combine the cashew butter, maple syrup, and vanilla extract. Stir until smooth and well-blended.
  3. Gradually add the rolled oats, cocoa powder, and salt to the wet mixture. Mix until thoroughly combined.
  4. Pour the mixture into the prepared pan and press it down evenly with the back of a spoon or your hands.
  5. Place the pan in the refrigerator for at least 2 hours to let the bars set firm.
  6. Once chilled, lift the bars from the pan using the parchment paper and cut them into squares or rectangles.

Notes

These bars can be stored in an airtight container in the refrigerator for up to a week, or frozen for up to three months. Consider pairing them with fresh fruit or whipped cream for a delightful dessert experience.
