  • 1 cup coconut milk or any plant-based milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey or maple syrup for sweetness adjustment
  • 1 lime zest from 1 lime
  • 2 limes juiced
  • 1/2 cup shredded coconut
  • Fresh fruits (like strawberries or mangoes) for topping

Preparation
  1. In a medium mixing bowl, whisk together the coconut milk, chia seeds, honey, lime zest, and lime juice until well combined.
  2. Allow the mixture to sit for about 10 minutes, stirring once or twice until it starts to thicken.
  3. Fold in the shredded coconut and give it one last good stir.
  4. Pour the chia pudding mixture into a lined square baking dish (approximately 8x8 inches) and smooth out the top.
  5. Place the dish in the refrigerator for at least 3-4 hours, or until fully set.
  6. Once set, remove the pudding from the dish and cut it into bars. Top with fresh fruits or a sprinkle of extra coconut before serving.

Notes

Keep in an airtight container in the refrigerator for up to one week or freeze for up to three months. Slice before freezing and layer parchment paper between the bars.
