Preparation
- In a large mixing bowl, combine the softened cream cheese and powdered sugar. Beat on medium speed until smooth.
- Stir in the vanilla extract and gently fold in the whipped topping until you achieve a creamy consistency. Be careful not to deflate the whipped topping!
Assembly
- In clear serving glasses, start with a layer of graham cracker crumbs at the bottom.
- Then add a layer of the cheesecake mixture, followed by a generous spoonful of cherry pie filling.
- Repeat the layers until the glasses are full.
Chill and Serve
- Place the parfaits in the refrigerator for at least 2 hours to let them set.
- Before serving, top with extra whipped topping and a cherry if desired.
Notes
Store leftovers covered with plastic wrap in the refrigerator for up to 3 days. Best enjoyed fresh. Avoid freezing as texture may change.
