No Bake Cheesecake Parfait

Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping Gently folded into the mixture.
Layering Ingredients
  • 1 cup graham cracker crumbs Use either cinnamon or chocolate graham crackers for a twist.
  • 1 can cherry pie filling (about 21 oz) Can swap with other fruit toppings.

Method
 

Preparation
  1. In a large mixing bowl, combine the softened cream cheese and powdered sugar. Beat on medium speed until smooth.
  2. Stir in the vanilla extract and gently fold in the whipped topping until you achieve a creamy consistency. Be careful not to deflate the whipped topping!
Assembly
  1. In clear serving glasses, start with a layer of graham cracker crumbs at the bottom.
  2. Then add a layer of the cheesecake mixture, followed by a generous spoonful of cherry pie filling.
  3. Repeat the layers until the glasses are full.
Chill and Serve
  1. Place the parfaits in the refrigerator for at least 2 hours to let them set.
  2. Before serving, top with extra whipped topping and a cherry if desired.

Notes

Store leftovers covered with plastic wrap in the refrigerator for up to 3 days. Best enjoyed fresh. Avoid freezing as texture may change.
