- Start by pitting the dates if they aren’t already.
- In a food processor, add the walnuts and pulse until finely chopped, about 10-15 seconds.
- Add the pitted dates and cocoa powder to the processor with the walnuts, and blend until well combined and sticky.
- Take small amounts of the mixture and roll them into balls about the size of a golf ball.
- Place the balls on a baking tray lined with parchment paper.
- Transfer the brownie bites to the refrigerator for 15-20 minutes to firm up.
- Once solid, they are ready to enjoy!
Notes
Store in an airtight container in the refrigerator for up to a week or freeze for two months, separating layers with parchment paper.
