This **Neapolitan Cheesecake** is a **beautifully layered no-bake dessert** that combines **three classic flavors—vanilla, strawberry, and chocolate—into one creamy, indulgent treat**.

  • - ½ cup fresh or frozen strawberries
  • - ¼ cup melted dark chocolate

Instructions
 

  • #### **Step 1: Prepare the Crust**
  • In a bowl, mix **graham cracker crumbs, melted butter, and honey** until combined. Press firmly into the bottom of a **greased 9-inch springform pan**. Chill in the fridge while preparing the filling.
  • #### **Step 2: Prepare the Cheesecake Base**
  • In a large mixing bowl, beat together **cream cheese, Greek yogurt, honey, vanilla, and lemon juice** until smooth.
  • #### **Step 3: Activate the Gelatin**
  • In a small bowl, dissolve **gelatin in ¼ cup hot water**. Stir well and let it sit for 5 minutes until slightly thickened. Slowly mix it into the cheesecake batter.
  • #### **Step 4: Divide & Flavor the Layers**
  • Divide the cheesecake mixture evenly into **three bowls**:
  • - **Vanilla Layer (Base Layer)**: Leave one portion plain.
  • - **Strawberry Layer (Middle Layer)**: Blend the second portion with **strawberries** until smooth.
  • - **Chocolate Layer (Top Layer)**: Stir the third portion with **melted dark chocolate**.
  • #### **Step 5: Assemble the Cheesecake**
  • Pour the **vanilla layer** onto the crust and smooth it out. Freeze for **10 minutes** to set slightly. Repeat with the **strawberry layer**, then the **chocolate layer**, freezing for **10 minutes between each layer**.
