- In a large pot over medium heat, warm the olive oil.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, bell pepper, and jalapeño (if using), and cook for another 3 minutes.
- Add the ground turkey or beef to the pot, breaking it up with a spoon and cooking until no longer pink, about 5–7 minutes. Drain any excess fat if necessary.
- Stir in the kidney beans, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Mix well to combine all ingredients.
- Bring the mixture to a simmer and reduce the heat to low. Let it cook for about 20 minutes, stirring occasionally.
- After simmering, taste and adjust seasoning if needed. For more spice, add extra chili powder or a dash of hot sauce.
- Ladle the chili into bowls and top with fresh cilantro and shredded cheese if desired.
Notes
Customize the heat by adjusting the peppers and chili powder. For a hint of sweetness, add brown sugar. Use fresh ingredients for the best flavor. Let the chili simmer for the flavors to meld beautifully.
