My Husband’s Best Stovetop Chili

  • 2 tablespoons olive oil
  • 1 medium onion, chopped Chopped for sautéing.
  • 2 cloves garlic, minced
  • 1 unit bell pepper, diced Any color.
  • 1 unit jalapeño, diced Optional for heat.
  • 1 pound ground turkey or beef Can use plant-based substitute.
  • 1 can kidney beans, drained and rinsed 15 oz can.
  • 1 can black beans, drained and rinsed 15 oz can.
  • 1 can diced tomatoes 28 oz can.
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • to taste Salt and pepper
  • to serve Fresh cilantro and shredded cheese For serving.

Method
 

Preparation
  1. In a large pot over medium heat, warm the olive oil.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic, bell pepper, and jalapeño (if using), and cook for another 3 minutes.
  4. Add the ground turkey or beef to the pot, breaking it up with a spoon and cooking until no longer pink, about 5–7 minutes. Drain any excess fat if necessary.
  5. Stir in the kidney beans, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Mix well to combine all ingredients.
  6. Bring the mixture to a simmer and reduce the heat to low. Let it cook for about 20 minutes, stirring occasionally.
  7. After simmering, taste and adjust seasoning if needed. For more spice, add extra chili powder or a dash of hot sauce.
  8. Ladle the chili into bowls and top with fresh cilantro and shredded cheese if desired.

Notes

Customize the heat by adjusting the peppers and chili powder. For a hint of sweetness, add brown sugar. Use fresh ingredients for the best flavor. Let the chili simmer for the flavors to meld beautifully.
