Ingredients
  

Dough Ingredients
  • 1.5 cups warm water (110°F to 115°F)
  • 2 tablespoons granulated sugar
  • 1 package active dry yeast (2 ¼ teaspoons)
  • 4 cups all-purpose flour
  • 1 teaspoon salt
Topping Ingredients
  • 0.5 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt for sprinkling
  • 8 ounces mozzarella cheese (cut into sticks)

Method
 

Preparation of Dough
  1. In a large bowl, combine warm water, sugar, and yeast. Allow it to sit until frothy, about 5 minutes.
  2. Gradually stir in flour and salt until a dough forms. Knead for about 5 minutes until smooth.
Rising
  1. Cover the bowl with a damp cloth and let the dough rise in a warm place for about 30 minutes, or until it doubles in size.
Shaping and Baking
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Once the dough has risen, divide it into 8 equal pieces. Flatten each piece, place a mozzarella stick in the center, and fold the dough over it.
  3. Roll it out into a rope and twist into the pretzel shape.
  4. In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully add pretzels to the water for about 30 seconds, then remove and place on the baking sheet.
  5. Brush the tops with beaten egg and sprinkle coarse sea salt. Bake for about 12 to 15 minutes or until golden brown.
Cooling
  1. Allow them to cool slightly before adding a delicious dipping sauce, and enjoy your mozzarella stuffed pretzels!

Notes

Store in an airtight container at room temperature for up to 2 days. For longer storage, freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 10 minutes.
