Method
 

Cooking Steps
  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper.
  3. Add the chicken breasts to the skillet and cook until golden brown, around 6-7 minutes per side.
  4. Once the chicken is cooked through, remove it from the skillet and set it aside on a plate.
  5. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  6. Stir in the halved cherry tomatoes, fresh spinach, chicken broth, and Italian seasoning, bringing the mixture to a simmer.
  7. Place the cooked chicken back into the skillet with the sauce and cover; allow it to cook for an additional 10 minutes.
  8. Plate your mouthwatering chicken, topped with grated Parmesan cheese, and enjoy!

Notes

Store leftovers in an airtight container for 3-4 days. Reheat in the microwave or a skillet with a little broth to keep the chicken moist. Can be frozen for 2-3 months.
