  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Cream filling (your favorite recipe or store-bought)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and brown sugar until fluffy, about 3–5 minutes.
  4. Mix in the molasses, egg, and vanilla extract until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
  6. Scoop tablespoon-sized balls of dough and place them on a baking sheet lined with parchment paper, spacing them about two inches apart.
Baking
  1. Bake for about 8–10 minutes or until the edges start to become golden. The centers might look slightly soft, but they will firm up as they cool.
  2. Once the cookies have cooled completely, spread a generous amount of cream filling between two cookies to create delightful sandwiches.

Notes

Chill the dough for about 30 minutes before baking for thicker cookies. Keep an eye on the cookies while they bake; a little underbaked is better as they will continue cooking while cooling on the tray.
