Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round or square cake pan with butter or non-stick spray.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, mixing well after each addition. Then stir in the sour cream and vanilla extract until fully combined.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in the chopped rhubarb until evenly distributed.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake for 30-35 minutes, or until the cake is golden brown and a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For additional flavor, lemon zest can be added to the batter. Store at room temperature in an airtight container for up to 3 days, or refrigerate for up to a week. For freezing, wrap tightly in plastic wrap.
