Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large mixing bowl, whisk together the honey, vegetable oil, and sugar until well combined. Add the eggs one at a time, mixing thoroughly after each addition.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredient mixture to the wet ingredients. Pour in the milk, and gently fold the ingredients together until just combined.
- If using, fold in the chopped walnuts.
- Transfer the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack. Let it cool completely before slicing.
Notes
Store in an airtight container for up to 3 days. For longer shelf life, wrap tightly and freeze for up to 3 months. Thaw in the fridge overnight and warm in the microwave before serving.
