Ingredients
  

Wet Ingredients
  • 1 cup honey
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup milk
Dry Ingredients
  • 1 cup all-purpose flour Can be substituted with whole wheat flour for a healthier option.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Add-ins
  • 1/2 cup chopped walnuts Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large mixing bowl, whisk together the honey, vegetable oil, and sugar until well combined. Add the eggs one at a time, mixing thoroughly after each addition.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  4. Gradually add the dry ingredient mixture to the wet ingredients. Pour in the milk, and gently fold the ingredients together until just combined.
  5. If using, fold in the chopped walnuts.
  6. Transfer the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack. Let it cool completely before slicing.

Notes

Store in an airtight container for up to 3 days. For longer shelf life, wrap tightly and freeze for up to 3 months. Thaw in the fridge overnight and warm in the microwave before serving.
