Ingredients
  

Main Ingredients
  • 3 medium oranges Fresh and preferably organic.
  • 1 cup almond meal Ground almonds.
  • 1 cup sugar Granulated white sugar.
  • 6 large eggs At room temperature.
  • 1/2 teaspoon baking powder For rising.
  • 1/2 cup pistachios, chopped Plus extra for garnish.

Method
 

Preparation
  1. Wash your oranges thoroughly. Blanch the oranges in boiling water for about 15 minutes, changing the water halfway through, then cool and chop into quarters, removing any seeds.
Blending Ingredients
  1. In a food processor, blend the chopped oranges, sugar, and eggs until smooth. Then, add the almond meal and baking powder, blending again until well combined.
Baking
  1. Preheat your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper. Pour the batter into the pan and bake for 40-45 minutes, or until a skewer comes out clean.
Cooling and Garnishing
  1. Allow the cake to cool completely in the pan. Once cool, remove from the pan, garnish with additional chopped pistachios, and serve.

Notes

For best results, use fresh oranges and do not overmix the batter. Store in an airtight container in the refrigerator for up to five days or freeze individual slices for later consumption.
