Preparation
- Preheat your oven to 350°F (175°C).
- Lightly grease an 8x4-inch loaf pan with butter or non-stick spray and set it aside.
- In a mixing bowl, mash the bananas with a fork or potato masher until smooth.
- Stir the melted butter into the mashed bananas.
- Next, stir in the baking soda and a pinch of salt.
- Add the sugar, beaten egg, and vanilla extract to the mixture and stir until well combined.
- Mix in the all-purpose flour until just incorporated. Avoid over-mixing.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50-60 minutes. Check for doneness by inserting a toothpick into the center.
- Once baked, remove from the oven and let cool in the pan for about 10 minutes.
- Transfer to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to three days, or wrap in plastic and freeze for up to three months. To reheat, warm slices in a toaster or microwave.
