Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy.
- Beat in the eggs one at a time and then add the vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing—some lumps are okay!
- Gently fold in the chopped apples and pecans until evenly distributed.
- Pour the batter into a greased loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack.
- Drizzle with cinnamon glaze once cooled.
Notes
For best results, use a mix of sweet and tart apples like Honeycrisp and Granny Smith. Watch the baking time as ovens can vary.
