  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups peeled, chopped apples (about 2 medium-sized apples)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy.
  4. Beat in the eggs one at a time and then add the vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing—some lumps are okay!
  6. Gently fold in the chopped apples and pecans until evenly distributed.
  7. Pour the batter into a greased loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack.
  3. Drizzle with cinnamon glaze once cooled.

Notes

For best results, use a mix of sweet and tart apples like Honeycrisp and Granny Smith. Watch the baking time as ovens can vary.
