Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
Wet Ingredients
  • 0.5 cups unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 cup peeled and diced apples (e.g., Granny Smith) Choose firmer apples for better flavor and texture.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs, one at a time, ensuring they are well combined.
  5. Gradually add the dry ingredients to the mixture, alternating with the apple cider. Mix until just combined.
  6. Carefully fold the diced apples into the batter, ensuring they are evenly distributed.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
