  • 1 cup sweet rice flour (also known as mochiko)
  • ½ cup sugar
  • 1 tsp baking powder Don’t add too much for the best texture.
  • ¼ tsp salt
  • 1 large egg
  • ¾ cup milk (or dairy-free alternative)
  • ½ tsp vanilla extract
  • Vegetable oil for frying Heat to 350°F (175°C).

Method
 

Preparation
  1. In a mixing bowl, combine sweet rice flour, sugar, baking powder, and salt. Whisk together until well blended.
  2. In a separate bowl, whisk the egg, milk, and vanilla extract together. Gradually pour this mixture into the dry ingredients, stirring until smooth.
Cooking
  1. In a deep pot or fryer, heat vegetable oil to 350°F (175°C). You’ll want enough oil to submerge the doughnuts.
  2. Using a piping bag or a spoon, carefully drop spoonfuls of the batter into the hot oil, shaping them into rings or spheres.
  3. Fry for about 2-3 minutes on each side or until golden brown.
  4. Once done, remove from the oil and let them sit on paper towels to absorb excess oil.
  5. Once cooled slightly, decorate with your choice of toppings.

Notes

Mochi doughnuts can be served with ice cream, coffee, or fresh fruit. Store them in an airtight container at room temperature for up to 2 days, or freeze for longer storage. Reheat in the microwave or oven.
