Mixed Berry Frozen Yogurt Bites with Granola

Ingredients
  

For the yogurt mixture
  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tablespoons honey or maple syrup for sweetness
For the fillings
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Chop larger berries if needed
  • 1 cup granola your favorite kind
For preparation
  • as needed cooking spray optional, for easy removal

Method
 

Preparation
  1. In a mixing bowl, combine the Greek yogurt and honey. Mix well until creamy and smooth.
  2. Gently fold in the mixed berries.
  3. If using a silicone mold, lightly spray it with cooking spray. If not, line a baking sheet with parchment paper.
Filling
  1. Spoon the yogurt mixture into the molds, filling each cavity about 3/4 full.
  2. Sprinkle a tablespoon of granola on top of each bite for that delightful crunch.
Freezing
  1. Place the filled mold or sheet in the freezer for at least 3-4 hours or until completely frozen.
Serving
  1. Once frozen, remove the yogurt bites from the molds or cut them into squares from the sheet. Enjoy immediately or store for later!

Notes

Store in an airtight container in the freezer for 1-2 months. Let sit at room temperature for a few minutes before eating, or enjoy straight from the freezer.
