  • 1 tablespoon sesame oil
For the noodles and toppings
  • 200 g ramen noodles Cook according to package instructions.
  • 1 cup sliced vegetables (e.g., bell pepper, carrots, and cabbage) Use a mix of your choice.
  • Green onions, for garnish
  • Sesame seeds, for garnish

Method
 

Preparation
  1. In a medium saucepan, bring the vegetable broth to a gentle boil over medium heat.
  2. Once the broth is boiling, whisk in the miso paste and peanut butter until thoroughly combined.
  3. Stir in the soy sauce and sesame oil, letting the broth simmer for about 5 minutes.
Cooking the noodles
  1. While the broth simmers, cook the ramen noodles in a separate pot according to package instructions.
  2. Drain the noodles and set aside.
Combining ingredients
  1. In the last couple of minutes of simmering the broth, toss in your sliced vegetables.
  2. Let them soften slightly but still retain a bit of crunch.
  3. Once everything is ready, add the cooked ramen noodles to the broth, stirring to coat the noodles with the sauce.
Serving
  1. Ladle the ramen into bowls, sprinkle with green onions and sesame seeds.
  2. Serve hot and enjoy!
