  • - 2 large sweet potatoes halved lengthwise

  • - 1/4 teaspoon black pepper

  • - 3 tablespoons unsalted butter softened
  • - 1 tablespoon white miso paste
  • - 1 teaspoon honey or maple syrup
  • - 1 teaspoon rice vinegar
  • - 1/2 teaspoon soy sauce
  • - 1/2 teaspoon sesame oil
  • #### **For Garnish**
  • - 1 tablespoon toasted sesame seeds
  • - 2 tablespoons chopped scallions
  • - 1/4 teaspoon red pepper flakes optional

Method
 

  1. #### **Step 1: Roast the Sweet Potatoes**
  2. Preheat oven to 400°F (200°C).
  3. Brush the cut sides of the sweet potatoes with olive oil and season with salt and black pepper.
  4. Place them cut-side down on a baking sheet lined with parchment paper.
  5. Roast for 30-40 minutes until fork-tender and caramelized.

  7. In a small bowl, whisk together softened butter, miso paste, honey (or maple syrup), rice vinegar, soy sauce, and sesame oil until smooth.

  9. Flip the roasted sweet potatoes over and brush generously with the miso butter.
  10. Sprinkle with toasted sesame seeds, scallions, and red pepper flakes (if using).
