#### **Step 1: Roast the Sweet Potatoes**
Preheat oven to 400°F (200°C).
Brush the cut sides of the sweet potatoes with olive oil and season with salt and black pepper.
Place them cut-side down on a baking sheet lined with parchment paper.
Roast for 30-40 minutes until fork-tender and caramelized.
#### **Step 2: Make the Miso Butter**
In a small bowl, whisk together softened butter, miso paste, honey (or maple syrup), rice vinegar, soy sauce, and sesame oil until smooth.
#### **Step 3: Assemble & Serve**
Flip the roasted sweet potatoes over and brush generously with the miso butter.
Sprinkle with toasted sesame seeds, scallions, and red pepper flakes (if using).
