Ingredients
  

  • #### **For the Roasted Sweet Potatoes**
  • - 2 large sweet potatoes halved lengthwise
  • - 1 tablespoon olive oil
  • - 1/2 teaspoon salt
  • - 1/4 teaspoon black pepper
  • #### **For the Miso Butter**
  • - 3 tablespoons unsalted butter softened
  • - 1 tablespoon white miso paste
  • - 1 teaspoon honey or maple syrup
  • - 1 teaspoon rice vinegar
  • - 1/2 teaspoon soy sauce
  • - 1/2 teaspoon sesame oil
  • #### **For Garnish**
  • - 1 tablespoon toasted sesame seeds
  • - 2 tablespoons chopped scallions
  • - 1/4 teaspoon red pepper flakes optional

Instructions
 

  • #### **Step 1: Roast the Sweet Potatoes**
  • Preheat oven to 400°F (200°C).
  • Brush the cut sides of the sweet potatoes with olive oil and season with salt and black pepper.
  • Place them cut-side down on a baking sheet lined with parchment paper.
  • Roast for 30-40 minutes until fork-tender and caramelized.
  • #### **Step 2: Make the Miso Butter**
  • In a small bowl, whisk together softened butter, miso paste, honey (or maple syrup), rice vinegar, soy sauce, and sesame oil until smooth.
  • #### **Step 3: Assemble & Serve**
  • Flip the roasted sweet potatoes over and brush generously with the miso butter.
  • Sprinkle with toasted sesame seeds, scallions, and red pepper flakes (if using).
  • Serve warm and enjoy!
