Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter, sugar, and brown sugar until smooth and creamy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually incorporate this into the wet ingredients and mix until just combined.
- Gently fold in the mint chocolate chips and chopped mint leaves (if using).
- Using a cookie scoop or tablespoon, drop rounded dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly under-baked.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to a week. Freeze them for up to 2 months. Thaw or microwave before serving for best taste.
