  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips
  • 1/2 cup chopped mint leaves (optional) Add for extra mint flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter, sugar, and brown sugar until smooth and creamy (about 2-3 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually incorporate this into the wet ingredients and mix until just combined.
  5. Gently fold in the mint chocolate chips and chopped mint leaves (if using).
  6. Using a cookie scoop or tablespoon, drop rounded dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly under-baked.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. Freeze them for up to 2 months. Thaw or microwave before serving for best taste.
