Mini Sausage McGriddles are a homemade take on the beloved McDonald’s breakfast sandwich. These bite-sized breakfast treats combine fluffy maple pancake buns, juicy sausage patties, and a hint of sweet and savory goodness in every bite.

Ingredients
  

  • #### For the Pancake Buns
  • - 1 cup all-purpose flour
  • - 1 teaspoon baking powder
  • - 1/2 teaspoon baking soda

  • - 1 tablespoon sugar
  • - 3/4 cup buttermilk or regular milk
  • - 1 large egg
  • - 1 tablespoon melted butter
  • - 2 tablespoons maple syrup
  • - 1/4 cup maple syrup pearls or frozen maple syrup droplets, optional
  • #### For the Sausage Patties
  • - 6 breakfast sausage links or patties
  • - 1/2 teaspoon black pepper
  • - 1/2 teaspoon garlic powder
  • - 1/4 teaspoon smoked paprika
  • #### Optional Add-Ons
  • - 2 slices American cheese cut into quarters
  • - Additional maple syrup for drizzling

Instructions
 

  • **Prepare the Sausage Patties**
  • - If using sausage links, remove the casing and flatten into mini patties.
  • - Season with black pepper, garlic powder, and smoked paprika.
  • - Heat a non-stick skillet over medium heat and cook sausage patties for 3-4 minutes per side until browned and fully cooked. Set aside.
  • **Make the Pancake Batter**
  • - In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  • - In a separate bowl, whisk buttermilk, egg, melted butter, and maple syrup.
  • - Combine wet and dry ingredients, stirring just until mixed. Let the batter rest for 5 minutes.
  • **Cook the Mini Pancakes**
  • - Heat a griddle or non-stick skillet over medium-low heat and lightly grease with butter.
  • - Pour small dollops of pancake batter (about 1 tablespoon each) onto the griddle. If using maple syrup pearls or frozen droplets, sprinkle them onto each pancake.
  • - Cook for 1-2 minutes, then flip and cook for another minute until golden brown. Transfer to a plate.
  • **Assemble the Mini McGriddles**
  • - Place a sausage patty between two mini pancakes.
  • - If adding cheese, place a small piece of American cheese on the sausage patty before assembling.
  • - Drizzle with extra maple syrup if desired.
